While there are only a few naturally occuring species of Chilli
Pepper, there are great many cultivated varieties derived from these.
Capsicum annuum, is the basis not only common of varieties such as bell
peppers and jalapeņos, but also chipotles, which are smoked jalapeņos, poblanos
and anchos (which dried poblanos), New Mexico, Anaheim, Serrano, and others.
Capsicum frutescens, which includes cayenne, tabasco, Chiles de arbol,
aji, pequin, tabasco, cayenne and cherry peppers. Capsicum chinense,
which includes the hottest peppers such as habaneros, Scotch bonnets and
Jamaicans. Capsicum pubescens, which includes the South American rocoto
peppers. Capsicum baccatum, which includes the chiltepin.
